Chef Alvin Leong Opens Ba Wang Pan Mee with Unique Creations in Ang Mo Kio

Chef Alvin Leong has been stirring up a storm in the food scene as he has opened a pan mee stall in Ang Mo Kio.
If you’re an avid viewer of channel 8’s “食不可挡” cooking program, Chef Alvin’s face might ring a bell. He left an indelible impression in the first episode with his skilful preparation of pan mee, a dish close to his heart. Now you will get a taste of his pan mee at Ba Wang Pan Mee (霸王板面) where he showcases both traditional and innovative flavours.
A popular favourite would be their Classical Handmade Noodle ($4.50), where meticulously prepared noodles are served in a light bodied soup, and topped with minced meat, egg, crunchy ikan bilis, and fresh mani cai – a hallmark of authentic mee hoon kueh.
As you queue, your eyes will be drawn to the row of handmade dough at a corner. Select your preferred noodles – from the classic pan mee (ban mian) to u mian or mee hoon kueh. Each portion of noodles is made upon order. Once your order has been received, the skilled staff will deftly knead and cut the dough using a noodle machine.
Now, onto the dry rendition – the al dente, hand-made noodles are tossed in a luscious, dark sauce along with an array of seasonings. We love that a sous vide egg is cracked into every bowl and a generous spoonful of fried anchovies is added. Mix the pan mee well such that each strand is coated with the silky yolk. Just thinking about this has my stomach chiming in with hunger, truth be told.
Venturing beyond the classic, Chef Alvin has come up with other unique variations. I couldn’t resist sampling the Signature Dry Handmade Noodles with Hakka Fried Pork Belly ($5.50). The noodles, perfectly springy, play host to a topping of stewed minced pork that’s both aromatic and savory. The marriage of flavours in every bite makes it truly satisfying.
The Dry Handmade Noodles with Nyonya Fish Slices ($8.50) is seriously mouthwatering! The Nyonya paste packs a punch of sweet, savoury, sour, and spicy flavors all at once – it’s like a flavor explosion that totally hits the spot! You can add on dishes such as Otah Charcoal You Tiao ($5) or Sotong You Tiao ($5) to your noodles.
