Chef Kin HK Wanton Noodle – Ex-Crystal Jade Chef sells Wanton Mee in Yishun

Former Crystal Jade Executive Chef Chan Wing Kin started his own venture in the hawker world with his new stall, Chef Kin HK Wanton Noodle, in Yishun. With 18 years of culinary experience under his belt, Chef Kin dishes out restaurant-quality wanton noodles starting from an affordable $5.

When we arrived, we were greeted by the stall’s striking red walls and a picture of Chef Kin smiling warmly. It’s hard to miss the long queues that formed till the back of the shelter link, which prompted us to quickly stand in line. After a 15-minute wait, we were ready to find out if the noodles lived up to the hype.

The HK Wanton Noodle (Soup) ($5) is a classic that consists of fresh egg noodles resting in a gold-tinted broth topped off with five wantons. The golden broth was light and its flavourful alkaline taste cleansed my palate. The broth is best paired with the springy egg noodles that retained its QQ-ness even after being soaked in it.

The star of the show has to be the wantons. Each silky wanton is packed with generous chunks of well-seasoned shrimp and pork, which is then wrapped neatly. Biting down on each wanton while having some of the broth was certainly comforting.

The HK Dumpling Noodle (Dry) ($5) features dumplings loaded with additional bamboo shoots and black fungus on top of a prawn and pork filling. The bamboo shoots and fungus added a satisfying crunch to the dumplings. In the dry noodle version, the noodles are served with a house-made sauce mix of oyster sauce, soy sauce and lard oil that’s average in taste. I would recommend pairing it with the red chilli to amp up the flavours that the lacklustre oyster sauce failed to deliver.

Lastly, the HK Braised Beef Brisket Noodle (Dry) ($5.50) came with a decent amount of tender beef brisket that had the perfect fat-to-meat ratio. However, the beef brisket was slightly dry.

All things considered, I think that only the wantons are worth queueing for! Be prepared to brave the never ending queues if you will like to give the noodles a try!
