[ CNY 2014 ] Cherished Reunions at Yan Ting, The St. Regis Singapore

This Lunar New Year, Yan Ting Cantonese restaurant offers exquisite yet hearty oriental delicaceies specially crafted by new Executive Chef Mak Kip Fu. Chef Mak comes with impressive credentials. He has been the executive chef of Lung King Heen in Hong Kong and executive sous chef at Zi Yat Heen in Macau, both of which are Michelin-starred restaurants.

Toss to an auspricious start with Prosperity Yu Sheng with Norwegian Salmon (鴻運發財魚生, $88 Large, $48 Medium). Made with the freshest ingredients, the yusheng creates a harmonious texture and intense natural flavours.

Braised Superior Bird’s Nest Broth with Crab Meat (紅燒蟹肉官燕盞, $78) contains chunks of luscious crab meat and abundance of premium bird’s nest. A little sweet in taste, the crab meat is a delight.

Abalone is an ingredient that every Chinese family recognises as a symbol for wealth. Welcome a flourishing year with Braised Whole 5-Head African Abalone with Seasonal Greens (蠔皇原隻5頭鮑魚, $52). Lovely abalone sauce with huge abalone!

Hong Kong-Style Steamed Coral Trout (清蒸海東星柳, part of a set menu, no ala carte pricing available) is nicely presented in a steamer with lotus leaf. The fish meat is soft but I find the ginger slice kinda overpower the sweetness of the dish.

For a hearty serving of rich delights to share, go for the Prosperity Oyster with Moss and Conpoy (發菜扣蠔豉柱脯, $42). This big plate of intense goodness features the huge oyster, conpoy and moss.

Chef Mak’s Baked Rack of Lamb with Chef’s Signature Coffee Glaze (咖啡汁焗羊扒, part of a set menu, no ala carte pricing available) is unforgettable. The secret is in the coffee glaze which has a complex blend of sweet and savoury, rich and robust flavours from the coffee to mask the gamey lamb with sweet apple accents. Tender meat with crunch leaves to give a different texture.

Braised Ee-Fu Noodles with Seafood in XO Sauce (酱海鲜伊面, part of a set menu, no ala carte pricing available) is full of ingredients and I think I can only see a few strands of noodles. LOL. Not complaining, who would mind eating the whole plate of nicely stir fried see food?

Fragrant Home-Made Almond Tea with Hashima & Glutinous Rice Cake (杏仁茶雪蛤拼年糕, part of a set menu, no ala carte pricing available). The nian gao is slightly oily but so soft and chewy. Needless to say, of course I finished my bowl of Almond Tea with Hashima. Cheers to a more beautiful skin in 2014! 😀
