Duckland – Delicious Duck Dishes made with the Best Duck in the World

Duckland, TungLok Group’s latest restaurant, has just opened its doors at United Square Shopping Mall. Well, we don’t have to tell you what’s the star here, do we? The name of the restaurant says it all. Duckland’s menu is duck-centric, of course, but we aren’t just talking about your regular duck. We are talking about the best duck in the world.
“Best Duck in the World?”
Yes, this is a bold claim by the guys from Silver Hill Farm, the supplier of the famous Silver Hill Duck. The Silver Hill Duck is the product of choice of many top Chinese restaurants in London. The duck is so synonymous with such restaurants that it has earned the name “London Duck”.
More than 50 years ago, there were six top quality ducks that lived in Silver Hill Farm in Ireland. Over time, these ducks developed into the Silver Hill Duck that we know today. Silver Hill Farm has since polished its processes — from breeding, egg production, hatching and selection, to processing, cooking and packaging. The resulting product has won the hearts of Celebrity Chefs like Heston Blumenthal and Gordon Ramsay.
Look forward to Asian-inspired dishes such as ‘Mala’ Pork Cracklins and Duck Fried Rice, and classic dishes like the Irish Lamb Stew and Charcoal-grilled Babyback Ribs (500g). You’ll definitely be spoilt for choice here!
Roast Irish Duck (Half @ $28++)
As expected, the Duckland signature Roast Irish Duck (Whole Duck @ $50++, Half Duck @ $28++) was irresistible. Juicy and succulent, the duck was blessed with a good layer of fat that gave it a really rich flavour.
The plate came with 3 dips— raspberry, calamansi chilli and yellow mustard. There was also a delicious brown sauce which is made from duck jus, duck liver, orange liquor, rum and D.O.M! It complemented the duck flawlessly, and every bite of the tender duck promised a burst of umami.
One of my favourite dishes was the Irish Lamb Stew ($22++). The sweetness of the lamb echoed throughout the stew. Fragrant, hearty and satisfying, the stew was everything a good stew should be. The tender cubes of lamb, which carried the lovely flavours of spices and rosemary, sat amongst potatoes, carrots and celery. In all honesty, this is a one-dish meal that I can have everyday!
Always wanted to try the famous duck and waffle in London? You can have an equally amazing Duck Confit & Waffle ($20++) at Duckland! Beneath the thin crispy skin of the duck lies moist tender meat. Don’t forget to drizzle the accompanying 100% maple syrup over the fragrant waffle generously! Perfect for brunch, but actually perfect for anytime of the day too!
The Singapore Slaw ($15++) was the prettiest dish on the table. It comprised julienned red carrots, daikon, and turnip, and is decorated with herbs, and edible flowers. I loved how refreshing the raspberry dressing was, and the strong herbal and floral notes packed in the slaw.
The Caesar Salad with Calamari ($12++) featured perfectly cooked calamari. Nicely seasoned, with just the right amount of chewiness, the squid rings were encased in a light and flavourful batter. Duckland’s rendition of Caesar Salad is quite possibly the best rendition I’ve ever had.
The Good Ol’ Fish and Chips ($18) featured a super crispy barramundi fillet. I appreciated Duckland’s choice of barramundi as the fish is firmer and sweeter. The fish is accompanied with duck fat fries— what’s not to love?
We also tried the rustic Bacon, Cabbage and Colcannon ($20++). Colcannon is an Irish mashed potato dish that typically has chopped kale in it. The mashed potatoes ignited my cravings for carbs. I caught myself eating spoonful after spoonful, stuffing a piece of back bacon in every now and then in glee.
I was so full at this point. But it was time for dessert, so I activated my dessert stomach.
The Apple Crumble with Ice Cream ($10++) was chock full of delicious Granny Smith apples and held an enchanting scent of cinnamon. The crumbly and buttery crust was just the icing on the cake! You should possibly share this, but don’t be surprised if you want to have the entire crumble to yourself!
Don’t forget to get a slice of the Whiskey Cake with Ice Cream ($10++). Fret not, it won’t make anyone drunk. The rich chocolate cake is moist, and not too sweet. The hint of whisky lent a mild bitterness and a touch of sophistication. What a great end to an incredibly sumptuous meal.
After trying a good variety of Duckland’s dishes, I’m convinced that the Tung Lok Group has gotten it right again. Their incredible roast duck will definitely leave an impression. Your first visit will not be your last. Duckland is set to become one of Singapore’s favourite and best restaurants.
