Forture Seafood – Outstanding Cze Char Dishes

October’s Makanstura dinner was held at Forture Seafood, a restaurant located in Bukit Timah Road. The famous Chef Ah Loy who has left the restaurant for a few years, has now returned and is back to serve a wider variety of a la carte Chinese dishes.
Our dinner started with Supreme Dragon & Phenix Platter. It was a pleasant surprise with the pink and purple colour appearing on our table. Very elaborate plating for a cze char stall.
So the “dragon” is actually fried chicken with green lime & lemon sauce; while the “phoenix” is fried prawns drizzled with strawberry (pink) and dragonfruit / apple sauce (purple).
Very tasty Deep Fried Fresh Mushrooms.
Its Steamed Garoupa in Green Curry Sauce is different. Not only was the fish meat soft and fresh, the green curry sauce opens up the palette.
For a balanced meal, we also have Stir-fried Vegetable with Dried Scallops. The scallops were abit tough.
Village Style Salt-Baked Chicken comes with plates of minced sand ginger sauce. Chef says, these sand ginger are specially bought from Malaysia. Just rub some of it on the chicken and you can see taste the difference already.
Inspired by Peking Duck, Chef created Crispy Duck Rolls. Each of these duck rolls are like treasures sitting on a boat. The succulent pieces were wrapped with a thin layer of pancake skin.
Braised Herbal Pig Trotter is mixed with spices and herbs, and simmered for long hours until the whole piece looks reddish brown, while giving off a most appetizing sapor. It has a strong herbal presence and is not oily.
Crispy Hor Fun with Seafood is very different from what we usually have. Who else fries hor fun like that? The flat noodles are deep fried to a crispy texture and cooked with seafood such as fish maw, scallops, sea cucumber etc, which allows all the flavours and aromas to permeate through it. Chef calls it ”功夫河粉“, very true!
Dessert was Japanese Sweet Potatoes with Ice Cream. Very nice presentation, isn’t it?
For a local Cze Char place, the food at Forture Seafood is good and great value for money. If you are wondering why is it called “Forture”, the restaurant was previously called “Fortune”. But a feng shui master suggested changing the “N” to “R” for better business.
