Hin Hor Fun With Prawn. Beef. Sliced Fish. – Their Beef Mui Fan is Delicious!

Located slightly off the centre of the popular Ghim Moh Road Market and Food Centre is a stall specialising in hor fun. Hin Hor Fun not only sells the popular flat rice noodles dish with their very own unique gravy, but they offer a rice version as well(also known as Mui Fan). They have a long and consistent queue throughout the day but fret not, it moves fast as they have a good order taking system.
As there wasn’t much variety in terms of ingredients, I got the Beef Mui Fan ($5) and Fried Hor Fun with Sliced Fish and Prawn ($5). All items are priced at $5.
I observed that they have two types of gravy, one that is of a dark brown colour and the other is off-white. Turns out, the difference between the gravies is the presence of beef in the making of it. The owner shared that some customers don’t take beef, thus they decided to cater to them by making two types of gravy. I prefer the one with beef in it, as it is more flavourful.
As the main star of any hor fun dish is their gravy, I would say that Hin has nailed it. The gravy was viscous enough, yet not too thick, and it’s not jelak at all even when you’ve reached the end of your meal. It’s strong in flavours, yet it’s not too heavy.
I preferred the Mui Fan to the hor fun as I like my rice in this type of thick and wonderfully fragrant gravy. However, I think that the beef hor fun would taste as good too, because of the gravy used and the wok hei in it.
I like the tender beef slices. Before pouring over the gravy, the owner would scoop the sauce that he had marinated the beef with and drench the beef slices with it. It was a move that I deeply appreciated as it made the gravy even more flavourful.
While the ingredients given in both the dishes were not the most generous portions that I’ve had, it’s just enough to go with the carbs. The rice in the Mui Fan didn’t go into the wok for a spin, but the hor fun did. And, the result? A strong wok hei on the parts of the noodles that were left on the wok for an extended period. As such, the wok hei in the hor fun was not as even as I had expected it to be, with some parts of the noodles having a darker shade and a stronger charred fragrance.
I am quite particular about the fishy taste/ smell in fish slices and fish fillets. Unfortunately, I was hit by the waves of fishy taste from the fish slices in the hor fun. Thankfully, the prawns tasted fresh and springy. However, this is just a personal preference, as one of my food adventure companions was alright with that taste.
Another observation is the addition of Chinese cabbage instead of the usual leafy vegetables like xiao bai cai or chives to the dishes. I thought that it was a good complement, though quite uncommon. On another note, remember to take your own servings of green chilli and red chilli to go along with your food at the self-service condiments table!
In a nutshell, Hin’s Hor Fun is a heaven for those of you who love hor fun. I’d recommend the beef mui fan and/or hor fun if you’re able to consume beef, if not the fish gravy is not too bad too!
