I always have a list of places I wish to visit, and one of them is Jason Penang Cuisine at ABC Brickworks. They are the only Penang hawker stall in Singapore that has received the prestigious Michelin Bib Gourmand Award, so I was beyond excited to try their food. But luck has not been on my side—I visited a few times, only to find them closed.

The good news? Jason Penang Cuisine has opened a second outlet at Tampines 1! Now, you can enjoy their authentic Penang delights for breakfast, lunch, and dinner in a comfortable, air-conditioned setting.

Jason and his wife, Linda, hail from Penang and bring over 30 years of culinary experience to the table. Jason was the sole resident chef at the British High Commission for 14 years, where Linda worked alongside him as an assistant chef. His culinary expertise even led him to cook for the late Queen Elizabeth II when she visited Singapore in 1989!

At the Tampines 1 outlet, you’ll find their signature dishes: Penang Fried Kway Teow, Penang Assam Laksa, and Penang Prawn Noodle Soup. Plus, they’ve introduced two new side dishes—Penang Lor Bak and Golden Spring Rolls.

A plate of good Penang Fried Kway Teow needs the perfect balance of heat, seasoning, and texture. Here, the magic lies in the wok hei! The high heat control creates a smoky aroma, while the kway teow has a wonderfully bouncy texture. Each bite is packed with umami goodness, thanks to the combination of fresh prawns, Chinese sausages, eggs, and bean sprouts. The flavours are well-balanced—not too salty, not too greasy—just the way Penang locals love it.

The Penang Assam Laksa here is a true labour of love, boasting a deep, complex broth made with mackerel, tamarind, and a blend of spices. What makes it stand out is the seven types of garnishes—coriander, ginger flower, small chilli, prawn paste, cucumber, pineapple, and onions. The prawn paste sauce is specially sourced from Penang, giving it a strong fragrance and a sticky consistency that adds authenticity and richness. Plus, the noodles, imported from Penang, are soft and slippery, making each mouthful extra satisfying.

They also serve Penang Prawn Noodle Soup where the broth is prepared using stir-fried prawn shells to bring out their aroma before simmering them for hours. Rock sugar is added to balance the flavours with a slightly sweet finish.

Hawker culture is a cherished part of Singapore’s heritage, but sustainability is always a concern. Jason and Linda, both 64 years old, understand the challenges of running a hawker business as they age. That’s why the opening of their second outlet at Tampines 1 is such a great move—it allows more people to enjoy their amazing food while ensuring that their culinary legacy continues.
