La Strada – All You Need Is A Perfect Roasted Chicken

Crisp, thinly sliced fennel and Taggiasca Olives are the foundations of a favourite warm-weather Mediterranean salad, accented with bright and sweet orange slices. Yuzu dressing adds freshness in the seasoning and is more than enough to welcome Spring.
I was expecting a very filling lunch with lots of cream and carbs, so when a cup of mushroom cappuccino arrived, I was excited. Using Awabitake and porcini mushrooms, this highly drinkable earthy broth is complex enough to satisfy, yet light enough to maintain my enthusiasm for the next course.
Beautiful and vibrant vegetables and seafood sourced from all around the world take centre stage as they are skilfully transformed into refined creations prepared by Executive Chef Peter Teo and his team.
In the delicious Roasted Australian Rock Lobster, fresh lobster meat is sprinkled with celery, almonds and just a touch of aged balsamic. With a strong coffee colour, the traditional aged balsamic is an exceptional vinegar. It is highly aromatic with a complex and sweetly mellow flavour.
Get a burst of crustacean flavour from Obsiblue Prawns Linguini. What makes it so compelling is the deep flavours created by the prawns as it cooks, creating a lovely stock that combines with the pasta. This is quite a classic but I still salivate as I slurp every strand of pasta with layers of seaside aromas.
Roasted Whole Organic French Chicken is a showstopper on its own. The meat of a roast chicken is all well and good, but it’s the skin that I really adore. It is so crispy and beautiful that I could just eat it on its own. Served with Acquerello Risotto, this is good for 3-4 pax and makes a satisfying meal.
And it isn’t just the way the chicken is cooked that makes it so appealing: it is also the way it is sliced. The breast meat is cut from the bone in one piece; then each boneless breast is sliced diagonally in equal width. Very good-looking chicken.
