Madu The Bakery - store interior

Formerly a home business, Madu The Bakery has opened its doors on Race Course Road. As I stepped into the bakery cafe, the first thing that hit me was the aroma of garlic. Next, the only thought I had was how this place looks right out of a furniture catalogue or a pinterest board — the beige-woody interior was so aesthetically pleasing and strangely calming.

I headed straight for the glass display case where their seasonal bakes were laid out for customers to choose from. These aren’t on the menu though, so you’ll have to go over to see what’s available! Their selection of savoury sandwiches aren’t out on display as well, since they are all made to order.

Having tried their creamy yet airy Classic Garlic Bun ($5.50) before, I decided to go straight for the Umami Mushroom Bun ($6) that came blanketed in a generous amount of bonito flakes. Encased in the bun was a mix of Shimeji and Shiitake mushrooms and Wakame which gave each bite a burst of savoury notes. The brioche bun was coated in a crust of nori and a sprinkle of furikake which added a nice crunch.

This stuffed bun would make for a satisfying light meal but if you’re looking to dig into the plethora of bakes on offer, I would suggest sharing this with a friend or two.

As a lover of local delights and fusion dishes, I had to try their Cereal Prawn Croissant ($11.90). Needless to say, this stole my heart. Sitting on a layer of cheese was a heap of toasted cereal, peeled tiger prawns, red chilli, and crisp curry leaves. The sweetness of the prawns went hand in hand with the butteriness of the perfectly done croissant, and was enlivened by the drizzle of citrus yuzu mayo.

I also had their Madu Croissant ($4.50) filled with orange custard and chocolate to satisfy my sweet tooth. Topped with baked almond slices that paired well with the creaminess of the filling, this croissant also came with a dusting of cocoa powder. The Genmaicha Financier ($2.50) was dense and packed with green tea flavours. While it was nicely crisp on the outside and super moist on the inside, I found that it lacked that distinctive roasted flavour of Genmaicha.

Madu The Bakery - coconut latte

To wash it all down, I went for one of their signature coffees — Coconut Cafe Latte ($5.50). Coated on the rim of the ceramic cup were some sweet coconut flakes. The coconut was not as overwhelming as I thought it would have been. Rather, it was still smooth and light on the palate.

Do note that this drink is only served hot, so if you’d rather something cold to quench your thirst, you can opt for their other signature drinks such as the Yuzu Espresso Tonic or the Aerocano.

On top of these bakes, Madu The Bakery also offers some cakes, albeit a small selection, which include a Bolu Keju Cake ($6) and an Espresso Pistachio ($9.90) Tiramisu-style dessert. The staff did mention that they might be expanding their menu, so we can all look forward to that!

Besides gobbling down the delectable spread of bakes, I thoroughly enjoyed my time there thanks to the friendly staff. You can take my word when I say I will definitely be back again for more!
