Niu Dian – Michelin Bib Gourmand Taiwan Beef Noodle Shop Opens in Singapore

Michelin Bib Gourmand awardee – Niu Dian Beef Noodles has finally landed in Singapore at VIIO @ Balestier. With just one branch in Ximending, Taipei, Taiwan, they serve bowls of mouthwatering authentic Taiwan Beef Noodles.
Started in 2005, Founder Mr Lin Chun Ying has a vast record of 5-star Western cuisine experience as Head Chef of the local hotel industry. He wanted to recreate and share his love for beef noodles. After many rounds of trial and error, he has incorporated hints of Western cooking methods into Chinese cuisine and thus creating the unique Beef Noodles, which earned him 3 consecutive years of Michelin Bib Gourmand awards.
Niu Dian is popular for their handmade noodles that are chewy in texture. Instead of the usual broth, Niu Dian’s broth is somewhat like a consommé style made from 24 hours of brewing with a variety of quality beef bone parts and herbs. Using only premium beef parts that are specially flown-in from Australia, all the sauces and marinades are imported from Taiwan to ensure consistency in flavour across Niu Dian’s outlets.
Niu Dian’s signature dish is Combination Specialty Beef Noodles (满福牛肉面) made with boneless beef rib fingers, golden coin, tripe and tendon. You can choose between original or braised broth. I love the original broth. The clear broth is surprisingly flavourful. Comparing to other beef noodles that are more robust, this is cleaner in taste but still very much complex and appetising.
Alternatively, go for other options such as the Trio Specialty Beef Noodles that include boneless beef rib fingers, golden coin and tendon, or Beef Noodles with various beef parts for diners to choose from. Pair the beef slices with spicy sauce that is made from pepper and stir-fried over an hour with beef oil. For those who prefer having dry noodles, go for Spicy Pepper Combination Specialty Beef Noodles.
To pair with the beef noodles, you can order some side dishes such as cold cucumber and cold century egg tofu with bonito flakes. The brand has collaborated with homegrown bubble tea brand, Palace Tea, and introduced a selection of in-house creations and signature drinks for the bubble tea lovers.
