One Stone Three Birds – Customers Have a Say in the Locally-Inspired Gelato Here!

One Stone Three Birds is a quaint little cafe in 443 Clementi which sells gelato inspired by local flavours. The cafe’s theme is centred around the community in Clementi. They communicate regularly with their customers, gathering feedback and suggestions on their various gelato flavours.
In line with the community theme, they showcase art pieces done by the children who visit the cafe. He even has a photo wall filled with photos of his customers.
Here, they recommend trying every single gelato flavour available before making your choice. I appreciate that they use metal teaspoons for taste tasting. Save the turtles environment, am I right? All jokes aside, the idea of using reusable spoons is not only environmentally friendly, but also smart.
Their flavours change frequently, and these were the flavours available on the day I went.
Some of the flavours have stories behind them. The Kopi C Gao came about when an uncle looked through the flavours, and was disappointed to not find a single coffee flavour. So, Jackey started developing a coffee flavour for the uncle. They played around with different types of coffee and each time, they asked for the uncle’s feedback. Finally, the coffee that appeased him was made with freshly ground Batu coffee beans, which Jackey got from the nearby market.
Even though it was made purely with coffee, the ice cream tasted like mocha. The brown bits looked like chocolate, but are actually ground coffee beans, which brought a pleasant bitterness. The ice cream itself was velvety smooth, which was a delight. One scoop here is very affordably priced at just $3.80!
Yinn’s Osmanthus & Chrysanthemum has a story too! Jackey, the owner, asked one of their regular customers to suggest a flavour. If it worked, they would make it an official flavour. Yinn thought about it, and suggested chrysanthemum, which piqued Jackey’s interest. Jackey then went to a local Chinese medicine shop to ask for some advice on the pairing of chrysanthemum and gelato. After many R&D attempts, he came up with Yinn’s Osmanthus & Chrysanthemum, which quickly skyrocketed in popularity.
The ice cream is speckled with goji berries, osmanthus, and chrysanthemum flowers. The chrysanthemum flavour was quite pronounced, which is perfect for a person who loves the tea, like me. The texture was somewhat fibrous with the flowers in them, but it made for an interesting mouthfeel. The ice cream was not too sweet as well. We got this flavour in a cone, which was an additional ($0.60).
Last but not least, to take things up a notch, we got the Ritz Cheese (extra $1 as it’s premium flavour) with their signature brownie waffle sticks ($3). They’re called brownie sticks because when cooled, they will harden and become brownie-like in texture. However, they are still light enough to be classified as waffles.
The Ritz Cheese ice cream itself was quite salty on the first bite. The creamy cheese flavour was present in each bite, and I’m sure any cheese lover will enjoy this.
Unfortunately, around March, Jackey might close his shop as there was an issue with investors pulling out recently. When the time comes, he will be accepting orders on his website. Hopefully, when he gets the situation fixed, he will be opening his cafe again in the same area!
