Racines Unveils a New Menu: A Perfect Blend of French and Asian Flavours

Tucked inside Sofitel Singapore City Centre, Racines has always been known for its seamless blend of French finesse and comforting Asian flavours. Now, with the launch of its exciting new menu, Racines takes things to the next level. They’re bringing a fresh, ingredient-forward approach that highlights the natural flavours of ingredients, without the inclusion of heavy sauces or overpowering elements.

We kickstarted lunch with the beautifully-cooked Pan-Roasted Duck Foie Gras, which paired surprisingly well with the sweet grapes, crunchy hazelnuts, and deep, velvety port jus.
The Seared Hokkaido Scallops à la Meunière were another standout. The scallops were lightly seared, golden on the outside and tender inside. They were finished with a splash of calamansi, which lent a bright citrus kick.
The real star has to be the Racines Lobster Bisque. Made from scratch using lobster shells, brandy, and French butter, it had an incredible depth of flavour. The addition of lemongrass added a subtle Asian touch, and the indulgent dish comes with half a Boston lobster.
For mains, I had to try the Singapore Style Hokkien Mee, a popular dish at Racines. The broth, which had been simmered for ten hours, gave the noodles a rich flavour. The dish was packed with roasted pork belly, juicy tiger prawns, and squid, and accompanied by a touch of sambal for a gentle heat.
The Soy-Baked Black Cod was another highlight. Cooked to absolute perfection, the fish, which was flaky and tender, was coated in a soy, ginger, and honey marinade that gave it a nice balance of sweetness and umami. If you love salmon, the Pan-Seared Salmon will sweep you off your feet. It had a crisp golden crust, was moist inside, and came with a comforting clam and potato ragout.
One of the most interesting dishes on the menu was the Salt-Baked Pineapple-Fed Yellow Chicken Leg. This unique dish features chicken that has been marinated for six hours before being baked in salt, which keeps the meat incredibly juicy. Served with cordyceps, truffle, and brown rice, this Asian-style dish was nourishing and a delightful palate pleaser.
The Pineapple-Fed Yellow Chicken Supreme which showcases the same high-quality chicken prepared in French style is not to be missed as well. The breast meat was slow-cooked in a tasty stock, then complemented with a creamy truffle velouté, asparagus, and mashed potato — a refined and elegant dish. Both dishes are zero-waste!
Of course, no meal is complete without dessert. The creamy and smooth Cempedak Crème Brûlée was a surprise. It carries a subtle fragrance of cempedak, and is topped with a crisp caramelised sugar crust.
But the one dessert that truly won me over was the Ondeh-Ondeh. Racines’ version is beautifully layered with pandan, gula melaka, and coconut — almost like an Opera cake. The coconut biscotti on top added a nice crunch, making the ensemble an enjoyable mix of textures.
Every visit to Racines feels like a treat, but this exciting new menu is especially irresistible and definitely deserves special attention. It’s rare to find a place that does both French and Asian food well, but Racines delivers on both fronts.
