Indulge in Resorts World Sentosa’s Luxurious Eight-Piece Dumpling Feast This Dragon Boat Festival

Dragon Boat Festival is almost upon us and with it comes the tradition of indulging in zong zi (rice dumplings). Treat yourselves to the best with Resorts World Sentosa’s (RWS) eight-piece gourmet Dumpling Feast ($118 nett). Curated by eight master chefs across RWS’ family of restaurants, the rice dumplings embody the diverse flavours of Asia and will, no doubt, whisk you away to a land of gastronomic adventure.
Not only are sustainably sourced ingredients aplenty in this luxurious Dumpling Feast, the packaging is made from kraft, a 100% recycled and natural biodegradable material. RWS is taking one step towards keeping our beloved planet clean, green and healthy.
A Hakka-style creation at its finest, the Golden Summer Dumpling (金色夏天) is inspired by Feng Shui Inn’s Chef Li Kwok Kwong’s childhood in his native country, Hong Kong. This traditional dumpling uses premium ingredients such as braised whole 10-head abalone, smoked duck, five-spice premium pork belly, sustainably sourced crab meat, Japanese Hokkaido dried scallops, salted egg, roasted chestnuts and mung beans — all signifying abundance. At first bite, it might seem like too much but as I made my way through the rest of the dumpling, all the flavours succinctly came together.
Rocking a gorgeous gem-like pink hue, Ocean’s Jewels Dumpling (海洋珍宝粽) is packed with quality treasures from the sea. Crafted by RWS Executive Sous Chef Goh Wee Meng, the dumplings are a culmination of sweetness and nostalgic flavours. This will be the one seafood fans will fall in love with, hands down. Expect umami-filled sea whelk from France, chai po (sweet preserved radish), salted egg yolk, chestnuts, shiitake mushrooms and Japanese Hokkaido dried scallops, all neatly packaged into the Japanese hoshi ebi-infused glutinous rice.
Old is gold and Osia Steak and Seafood Grill’s Chef Danny Fong knows that. While the Eternal Amber Dumpling (永恒琥珀粽) seems no different from what you can get anywhere, it embraces tradition and more by elevating the timeless dumpling with succulent, luscious slabs of braised five-spice pork belly that is not only antibiotic-free but hormone-free as well. It’s no exaggeration to say that it’s absolutely addictive. The melt-in-your-mouth meat is paired with dried shrimps, roasted chestnuts, salted egg yolk and shiitake mushrooms.
The Nonya Sapphires dumpling (娘惹 蓝宝石粽) fuses Peranakan elements with the traditional zong zi. Coloured a lovely shade of brilliant blue by butterfly pea flowers, the glutinous rice encapsulates a mix of marinated minced pork belly, tiger prawns, mushrooms, dried shrimp and candied winter melon. The savoury mix of meat and mushrooms would have fared well on its own but was further elevated by the subtle sweetness of the candied winter melon and will surprise yet please your taste buds at the same time. With a dash of Feng Shui Inn’s special XO chilli sauce, Chef Lee Chee Man’s creation successfully marries sweet and savoury flavours into an alluring harmony.
Sushi in rice dumpling-form? I’m sold. This irresistible take on traditional Japanese box sushi is the brainchild of Syun’s Chef Noriyoshi Teruya, and is best enjoyed chilled. The Chest of Pearls dumpling (珠玉满盆粽) features aburi tai (Japanese sea bream) and red miso sous vide Tajima Wagyu beef encased in a jacket of Japanese sushi rice, and wrapped in bamboo leaves. As a huge fan of Japanese food (especially sushi!), I was definitely not disappointed with this delicious rendition. The slices of aburi tai and Tajima Wagyu beef were both tender in their own way, with the Japanese sea bream exuding gentler flavours compared to the robust beef. Oishii!
Luscious forest meets the salty ocean breeze in Resorts World Sentosa Executive Chef Tang Puck Seng’s wholesome creation. Now this was quite the feast all wrapped up neatly in a perfect triangle. The Twin Treasures Dumpling (美味双宝粽) uses a trio of black and white glutinous rice, and semi unpolished brown rice that exudes a gentle fragrance of the soy milk they were sautéed in. Hiding within are moreish treasures from the land and sea: morel mushrooms, Lion’s Mane, shiitake, superior conpoy, golden oysters and succulent sustainably sourced tiger prawns. The mushrooms and seafood were an indulgence on its own, which was nicely evened out by the mixed grains used.
Inspired by Thailand’s sticky rice dessert, the Siamese Jade Dumpling (暹罗美玉粽) will instantly transport you to Bangkok’s bustling streets. A unique and exclusive creation of Chef Surangkana “Aae” Sub-Anan, Chef de Cuisine of Resorts World Sentosa, the glutinous rice ensemble crafted with creamy coconut milk, palm sugar, lotus seed and a sweet taro filling is the dream of all with a sweet tooth. The rice itself wasn’t too rich to the point of making the dumpling jelak. The steaming taro filling reminded me of traditional taro paste desserts and was an excellent choice for this Thai-inspired creation.
For the health-conscious folks, you can still satiate the dessert lover in you with RWS’ Executive Pastry Chef Kenny Kong’s Bouquet of Rubies Dumpling (甜蜜红宝石粽). Packed within a medley of healthy grains like organic red rice, barley, prickly water lily and mung beans, are natural sweeteners of premium dried longan, kumquat, lotus seed, gula melaka, tapioca and azuki red beans. It also has an added touch of floral fragrance and a drizzle of pure longan honey, making it an all-in-one dessert without invoking any guilt in indulging. I know I certainly didn’t have any!
