The Cliff Welcomes Michelin-starred Guest Chef Alyn Williams

After playing host to an array of star-studded guests including Chef Pascal Aussignac, Chef Jarad Gallagher, and Chef Saul Bolton of Saul, The Singapore Resort & Spa Sentosa welcomes the final Michelin-starred of the year, Chef Alyn Williams from 13 – 17 August 2014 to award-winning restaurant, The Cliff.
If you do not know, Chef Williams opened his eponymous restaurant Alyn Williams at The Westbury in 2011 after years of training under big name chefs Gordon Ramsay and Marcus Wareing. His restaurant won Michelin star after less than a year of service and has been voted 15th in UK’s National Restaurant Awards 2012. Chef Williams also bagged the title of UK’s Best Chef of the Year in 2012.
This week, Chef Williams will be showcasing his style of straightforward cuisine with contemporary touches, featuring only the best of seasonal ingredients. I like his signature Foie Gras Semifreddo with Lemon Curd, Hazelnut and Coffee. Looking like the egg rolls that we have during CNY, Chef Williams gives an interesting twist to a conservative ingredient. The Foie Gras Semifreddo was creamy and flavourful.
Seafood aficionados can look forward to the Scottish Langoustine and Scallop with Grilled Watermelon, Spiced Almonds and Caviar Dressing. I like how the chef prepares the scallops in a creative manner. Grilled compressed watermelon is a great palate cleanser.
Because I enjoyed my plate of Japanese influenced Red Snapper with miso glaze, seaweed butter and beach vegetables, I was looking forward to the barbecued Welsh Lamb Shoulder with Dukka, Smoked Aubergine and Tzatziki. Unfortunately it fell short of my expectation. Yes I appreciate the tender lamb loin but the dish came pretty salty and we could hardly finish half a plate. To finish off, we had a glass of Caramelised White Chocolate Panna Cotta with Honeycomb and Passion Fruit. Honestly, the passionfruit was too strong and sourish for my liking.
Chef Williams will also be helming the Sparkling Sunday Champagne Brunch on 17 August to showcase special touches including Huevos Rancheros with Fresh Flour Tortilla, Black Beans and Heritage Tomato Salsa. Expect a star touch to breakfast favourites like Smoked Salmon and Potato Pancake with Caper Crème Fraîche and Crispy Bacon Horseradish, and indulgent Sunday brunch must-haves like the Grilled Veal Burger with Caramelised Onion, Ranch Dressing and Sweet Potato Chips.
The menu costs S$188++ per person with a glass of Champagne. You can enjoy unlimited servings of wine at an additional S$55++.
