Volk – Ex-Grand Hyatt Hotel Chef Sells Fresh Yakitori & Grain Bowls in Taman Jurong Food Centre!

In a bid to fulfil my new year resolution of eating healthier, I visited a stall that serves quality yakitori and grain bowls that don’t break the bank!
Tucked away among the end row of shops in Taman Jurong Food Centre, Volk was opened by former Grand Hyatt chef Eldad Tan on 3 November 2020. He started off his culinary journey with an internship at the Shangri-La Hotel when he was still in school, and proceeded to work at the Grand Hyatt for two years after graduating from Shatec.
Chef Eldad shared that he used to work as a manager at Poké Theory for two and a half years, which spurred him to set up a stall selling healthy grain bowls and quality skewers. His point of pride is using mostly locally-sourced ingredients to create his bowls, in an effort to support local food producers.
The stall sells 13 types of skewers that Chef Eldad grills over an electric grill before flame torching them.
Of all the skewers that I tried, my top picks were definitely the juicy Chicken Thigh ($1.80), the crunchy Bacon Enoki ($2), and the thick Pork Belly ($1.80). Each flamed skewer had a good smokiness, and was quite generous in portion. The stall also offers the option to craft a grain bowl with your choice of skewers (+$4).
Speaking of grain bowls, folks looking for seafood will find that the Sous Vide Salmon Bowl ($9.90) is a great choice. The grain bowl features a large piece of tender salmon sitting on a bed of white rice, sweet pineapple, edamame, cucumbers, cherry tomatoes, and seaweed salad. While the salmon was thick and fresh, I wished that it could’ve been more flavourful beyond its natural salmon taste. You can also change the white rice to brown rice, soba, or mixed greens at no extra charge.
