ZESPRI Kiwi Butter Cake

We all understand the importance of maintaining good health. Health authorities worldwide encourage people to eat more fruits and vegetables because they’re full of health promoting nutrients.
Kiwifruit is consistently ranked at the top of fruit in nutrition density models which tell us exactly how nutritious food are. That means you get more vitamins and minerals per gram, and per calorie, of kiwifruit than most other fruit.
ZESPRI™ Kiwifruit is back in town! Its GREEN and GOLD Kiwifruit are great sources of dietary fibre, vitamin C, potassium, folic acid, vitamin E, carotenoids and other antioxidants. They also have a low glycaemic index (GI) and are low in fat – so they’re perfect to eat every day to assist with natural protection.
Thanks to ZESPRI™, I received their introductory pack last week and can’t wait to do something with it. There is no end to the number of ways you can eat ZESPRI™ Kiwifruit. It’s great on its own, but try adding one to drinks, snacks, meals or desserts to add something special. Since I just bought a new oven, I decided to bake a kiwi butter cake for the family!
Kiwi butter cake (to make 7 inch round cake)
Ingredients:
150g Butter
10g Sugar
1g Salt
4 nos Egg Yolks
1/2 tsp Vanilla essence
90g Cake flour
1/2 tsp Baking powder
20g Evaporated milk
2 ZESPRI™ Kiwi fruit, chopped and mashed
4 nos Egg whites
80g Sugar
Method:
1. Sift the cake flour and baking powder.
2. Cream butter, sugar and salt together.
3. Add in the egg yolks, evaporated milk and vanilla essence.
4. White the egg white and sugar in a clean and dry bowl.
5. Add in the flour and whipped egg white into the mixture.
6. Add in mashed kiwi
7. Put it into a baking tin and bake till cooked, about 180 degrees for 30 minutes.
How to make Lemon Cream Cheese Icing?
Ingredients :
250g cream cheese, softened
60g butter
2 tbsp of lemon juice
1/2 tsp vanilla essence
200g icing sugar
Method:
1. Beat cream cheese and butter together till smooth and fluffy.
2. Add in lemon juice and vanilla.
3. Slowly add in icing sugar in 4-5 portions. Beat till creamy.
4. Spread it over the cake and decorate with kiwifruits and strawberries.
Hope you like my cake, my family loves the lemon cream cheese and when we eat it, we can taste the kiwifruits in the moist cake. I lowered my vanilla essence by half because I am allergic to it. You can add more icing sugar or lemon juice according to your preference.]
And of course, the recipe is just a basic butter cake recipe. You can replace it with other ingredients such as walnut, strawberries or simply a plain butter cake.
